Heat the oil in a heavy bottom pan over medium high heat. Line a sheet pan with a few towels and set aside.
Meanwhile, slice the potatoes into fry shapes. Once the oil heats up to 325F, carefully drop the fries into the hot oil. Fry for about 5 minutes or until the fries get very light brown. Take the fries out and drain them on the towel lined sheet pan.
Turn the heat up to high. Once the oil reaches 375F, carefully drop the fries back in the hot oil. Fry until the fries are golden brown. Drain and season generously with salt and pepper.
Top the hot fries with shredded cheese and hot sauce. If your fries have gotten cold, top the cheese on the cold fries and place it in the oven for 3 minutes at 300F. Heat just until the cheese melts.
