KEVIN, THIS IS US, SEASON ONE EPISODE 14


I can’t believe I almost missed the premiere of, This Is Us, on NBC.  It was only this morning when I overheard on the news that the showing is coming back tomorrow night!  So grab a blanket, some tissues, and possibly some lava fries and get ready.

The inspiration for lava fries comes from season one, episode 14 when Kevin sets up a meeting with Sophie at the diner they use to go to together.  In the scene, he desperately asks for an older couple to change tables (because that was the one Sophie and he use to sit at) and orders a plate of lava fries, all in preparation for Sophie to arrive.  Unfortunately, Sophie’s reaction wasn’t as happy as Kevin would have hoped.  Nevertheless, my mind was focused on the lava fries!

I’ve never actually seen lava fries on a menu before but my understanding is that it’s french fries with melted mozzarella and lots of hot sauce.  While I made my own fries, you can make it really easy on yourself and purchase fries at the grocery store.  Top the hot fries with cheese and hot sauce and you’re set for the season two premiere.  Please enjoy!

This Is Us: Lava Fries recipe inspired by the hit television show, This Is Us, on NBC. This comes from a scene between Keving and Sophie in the diner.

Ingredients
  

  • 4 large russet potatoes cleaned and sliced into fries
  • canola oil as needed for frying
  • salt and pepper as needed
  • 1/2 cup shredded mozzarella
  • hot sauce as needed

Instructions
 

  • Heat the oil in a heavy bottom pan over medium high heat. Line a sheet pan with a few towels and set aside.
  • Meanwhile, slice the potatoes into fry shapes. Once the oil heats up to 325F, carefully drop the fries into the hot oil. Fry for about 5 minutes or until the fries get very light brown. Take the fries out and drain them on the towel lined sheet pan.
  • Turn the heat up to high. Once the oil reaches 375F, carefully drop the fries back in the hot oil. Fry until the fries are golden brown. Drain and season generously with salt and pepper.
  • Top the hot fries with shredded cheese and hot sauce. If your fries have gotten cold, top the cheese on the cold fries and place it in the oven for 3 minutes at 300F. Heat just until the cheese melts.

    Just rewatched the episode. Couldn’t tell about the hot sauce but definitely saw jalapeños.
