Method
- In a bowl, whisk together the eggs, vanilla, and milk. In another bowl, stir the flour, sugar, and salt together until well combined.
- Add the wet ingredients to the dries and mix just until combined.
- Heat a cast iron pan over medium high heat. Add a pad of butter and once it's melted, add enough batter to cover the pan in a thin even layer. Flip the pancake over when when the top starts to set and the edges take a lightly golden color. Flip and cook for another 30 seconds.
- Serve with skyr and jam.
