Mary and Max: Lamingtons

A recipe for lamingtons inspired by movie, Mary and Max.

Ingredients
  

  • CAKE:
  • 3 - egg yolks large
  • 3 oz / 85g - milk
  • ½ tsp - vanilla extract
  • 3.5 oz / 100g - all purpose flour
  • 3,5 oz / 100g - granulated sugar
  • 1 tsp - baking powder
  • ½ tsp - salt
  • 3.5 oz / 100g - unsalted butter softened
  • GLAZE:
  • 4 cups - powdered sugar
  • 1/4 cup - cocoa powder
  • 1/2 cup - hot water
  • 2 tbsp - unsalted butter soft
  • shredded or desiccated coconut as needed

Method
 

  1. Preheat your oven to 350F and grease a 6" square pan.
  2. In a bowl, mix together the egg yolks, milk, and vanilla extract.
  3. In a mixing bowl, sift together the flour, sugar, baking powder, and salt. Mix until combined.
  4. Add the unsalted butter and mix on low speed until the flour is hydrated.
  5. Slowly stream in the yolk mixture until combined. Scrape the bottom of the bowl to make sure all the ingredients are well combined.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes or until cooked through.
  7. Cut the cake into cubes, the size really depends on how big you want them to be!
  8. Prepare the glaze by combining all the ingredients and mixing until smooth. Place cake on a fork and spoon the glaze over the cake,
  9. Tap off the excess and cover with the coconut. Let it dry on a sheet rack and continue with the rest of the pieces.
