Bring a pot of water to a boil over high heat with a generous pinch of salt. When it comes to a boil, add your pasta and stir occasionally to prevent it from sticking.
Meanwhile, heat a pan over medium heat with the olive oil. Add the bacon and garlic. Cook until the bacon is just golden but not crispy. In a separate bowl, whisk together the eggs and cheese. Season with salt and pepper.
When the pasta is ready, transfer the pasta to the pan with the bacon and garlic. Toss to combine. Reserve 1/2 cup of the pasta water. At this point the pan should be off the heat. Once it cools just down a bit, add the egg and cheese mixture and toss to combine. Add a few tablespoons of the reserved pasta water to help thin it down. Season with salt and pepper and garnish with some more grated parmesan.
