Preheat the oven to 350F.
In a bowl of a stand mixer fitted with a paddle attachment, beat the butter on medium speed until smooth and creamy. Add the sugar, salt and cinnamon. Mix on medium speed until thoroughly mixed.
Add the flour a cup at a time on low speed. Mix until a ball of dough forms. Refrierate until needed.
In a saucepan, melt the butter along with the cinnamon, nutmeg, honey, and water over medium heat. Cook until apples have softened but still holds its shape. Remove from heat and let it cool.
Take a small handful ball of dough and flatter it out with your hand. Fill the enter with 2 tbsp of apple filling and pinch the eggs together. Gently flatten it out again to make a disc shape and place it on a parchment line sheetpan. Repeat with the rest of the dough.
Bake for 20 minutes or until golden brown. Serve warm.
