Fences: Gabriel's Biscuits

Fences: Gabriel's Biscuits inspired by the 2017 Oscars movie and Pulitzer Prize winning play, Fences, starring Denzel Washington and Viola Davis.

Ingredients
  

  • 2 cups all purpose flour (9oz / 255g)
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 4 tbsp unsalted butter cold and thinly sliced
  • 2 tbsp shortening
  • 1 cup cold buttermilk (8oz / 227g)

Instructions
 

  • Preheat the oven to 450F. Prepare a baking sheet with parchment and set aside.
  • In a mixing bowl, combine your dries and mix to combine. Add the shortening and butter and cut the butter into the dries until the butter gets to about hazelnut size pieces.
  • Add the buttermilk and mix just until it comes together. The dough will be sticky and shaggy. Do not overwork it. Place the dough onto a lightly floured surface and roll it out until it's 1" thick. Cut out the biscuits with a biscuit cutter and transfer it to the prepared baking sheet.
  • Bake for 12 minutes until lightly golden brown.

Notes

  • Keep the butter and buttermilk as cold as possible.  The biscuits will come out much flakier if you use cold ingredients.
  • Try not to over work the dough.  Overworking the dough will lead to cakey and tough biscuits.
  • 12 minutes was the perfect bake time for my oven.  Keep an eye on the biscuits because it will dry out if it's in the oven for too long.
