Servings 5 people

Ingredients

Pigs in a Blanket

  • 14 oz mini sausages
  • 1 sheet puff pastry
  • 1 whole egg lightly whisked

Nut Cheese

  • 1 cup raw cashews 5oz / 142g
  • 1 clove garlic
  • 1/4 cup nutritional yeast
  • 1/4 tsp salt 1
  • 2 tbsp olive oil
  • juice and zest of half a lemon
  • 1/4 cup water

Instructions

Pigs in a Blanket

  • Prepare starting the recipe, soak the cashews in water for 12 hours or overnight in the refrigerator.
  • Preheat the oven to 400F. Prepare a baking sheet lined with parchment or silpat and set aside.
  • Roll out the puff pastry on a lightly floured until it reaches approximately, 11x14. Cut out 1" strips (more or less depending on the size of your sausages). Cut the strip into thirds and roll each piece around a sausage. Pinch the seam to seal it together. Place it on the baking sheet, seam side down.
  • After all the sausages have been wrapped, brush with the lightly whisked egg and bake for 10-15 minutes until golden brown.

Nut Cheese

  • Drain the water that the cashews have been soaking in. In a food processor, combine all ingredients, except for the water, and pulse to combine. Add the water a bit at at time until you get a dippable consistency. Taste for salt and pepper.
