Bring a large pot of water to a boil. Season with salt.
Preheat the oven to 400F.
Once the water comes up to a boil, add your pasta and cook until the pasta softens but still has a bite to it. It will continue to cook in the oven. Drain and set aside.
In another pot, melt your butter or shortening. Add your flour and whisk to combine.
Add your melt in three additions. Whisk in between each addition to prevent lumps.
Keep whisking on medium heat until the mixture thickens and coats the back of your spoon. This will take around 10 minutes.
Turn off the heat and add your cheese. Whisk to combine.
Toss your pasta in the cheese mixture along with the tuna. Pour the pasta into an ovenproof pan and bake.
Bake in the oven until cooked through. This will only take about 5-8 minutes in an 400F oven. You can add more cheese on top or even breadcrumbs.
