Thoroughly clean and dry each of the apples. Push the sticks into center of each apple. Prepare a sheet pan lined with a sheet of parchment and set aside.
Combine the sugar, water, vinegar, and golden syrup in a heavy bottom pot. Place over medium high heat. Heat the sugar to 300F-310F.
Once it hits the hard crack stage, take the pot off the heat and immediately dip each apple into the sugar. Twirl each apple in the sugar until you have a nice coating. Allow the excess sugar to drip off and let it cool the prepared sheet pan. Let it cool and harden before eating.
