Preheat the oven to 325F. Combine the water, sugar, and salt in a medium saucepan and bring it to a simmer over medium heat. Add your peanuts and stir constantly until the sugar begins to crystalize and dry. Add the cocoa powder and espresso powder to the pot and stir to combine.
Place the peanuts on a half sheet pan and bake for 15 - 20 minutes. Toss the peanuts around 8 minutes into baking. Let cool before serving.
