Mad Men: Steak and Potatoes

A recipe for classic steak and potatoes inspired by Mad Men's New Years episode in season 4.

Ingredients
  

  • 1 pound - T-bone Steak
  • 2 tbsp - canola oil
  • 2 tbsp - unsalted butter
  • 1 - medium russet potato
  • sour cream to top
  • grated cheddar to top
  • 1/2 cup - green peas
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 375F
  • Clean and scrub the potato well before cooking. Pierce the potato with a fork and toss the potato in olive oil, salt, and pepper and bake on a sheet pan for 1 hour or until the potato is soft and cooked through in the center. The skin should be nice and crispy.
  • minutes before cooking the steak, take it out of the refrigerator and let it temper at room temperature.
  • Heat a cast iron pan over high heat with canola oil. Season the steak liberally with coarse sea salt and pepper on both sides. When the pan is hot the and just about to smoke, carefully lay the steak on the pan.
  • Turn the steak every 45 seconds or so to get a more even cooking.
  • In the last few minutes of cooking your steak, add the butter. Baste the steaks with the melted butter with a spoon.
  • For medium rare, remove the steak from the heat at the internal temperature of the 130F. While it rests, the temperature should rise to 140F-145F.
  • Quickly cook the green peas in the same pan as steak, Season with salt and pepper.
  • To finish the baked potato, slice the potato in half, lengthwise, half way through the potato. Fluff it up with a fork and top with sour cream and cheese.
