Bridge of Spies: Meatloaf

A recipe for a classic meatloaf inspired by the movie, Bridge of Spies, starring Tom Hanks.

- 1 lb - ground beef
- 1 slice - white bread
- 113 g / 4oz / 1/2 cup - milk
- 2 tbsp - canola oil
- 1 stalk - celery minced
- 1 - carrot medium, minced
- 1/2 onion minced
- 1 - garlic clove minced
- 1 - egg large
- 56 g / 2oz / 1/4 cup - ketchup
- 2 dashes - worcestershire
- 1/4 tsp - dried thyme
- GLAZE:
- 1/3 cup - ketchup
- 1 tbsp - brown sugar
Preheat the oven to 350F.
Tear the bread into small pieces and soak it in milk until very soft.
Heat a pan over medium heat and add the oil. Add the carrots, onions, garlic, and celery to the pan and cook until soft, approximately 6-8 minutes.
Combine the ground beef, egg, thyme, worcestershire, ketchup, and cooked vegetables in a bowl. Mix together with your hands just until combined.
Line a sheet pan with parchment and shape the mixture into a loaf. Combine the glaze ketchup with the brown sugar and set aside.
Bake for 15 minutes, Glaze and bake for 10 more minutes until the internal temperature reads 155F. Let it rest for 15 minutes before slicing.
