Bridge of Spies: Meatloaf

A recipe for a classic meatloaf inspired by the movie, Bridge of Spies, starring Tom Hanks.

Ingredients
  

  • 1 lb - ground beef
  • 1 slice - white bread
  • 113 g / 4oz / 1/2 cup - milk
  • 2 tbsp - canola oil
  • 1 stalk - celery minced
  • 1 - carrot medium, minced
  • 1/2 onion minced
  • 1 - garlic clove minced
  • 1 - egg large
  • 56 g / 2oz / 1/4 cup - ketchup
  • 2 dashes - worcestershire
  • 1/4 tsp - dried thyme
  • GLAZE:
  • 1/3 cup - ketchup
  • 1 tbsp - brown sugar

Instructions
 

  • Preheat the oven to 350F.
  • Tear the bread into small pieces and soak it in milk until very soft.
  • Heat a pan over medium heat and add the oil. Add the carrots, onions, garlic, and celery to the pan and cook until soft, approximately 6-8 minutes.
  • Combine the ground beef, egg, thyme, worcestershire, ketchup, and cooked vegetables in a bowl. Mix together with your hands just until combined.
  • Line a sheet pan with parchment and shape the mixture into a loaf. Combine the glaze ketchup with the brown sugar and set aside.
  • Bake for 15 minutes, Glaze and bake for 10 more minutes until the internal temperature reads 155F. Let it rest for 15 minutes before slicing.
