16oz/ 454g / 5 cups - chopped applespeeled, medium dice(granny smith or mixed)
2tbsp- honey
3.5oz/ 100g / 1/2 cup - granulated sugar
1/2tsp- cinnamon
2tbspand 1/2 cupmelted - unsalted butter
1/2 -vanilla beanscraped
2tbsp- calvados
12 -thin slices white breadcrusts removed
Instructions
Preheat the oven to 400F.
Heat a dutch oven over medium heat and add the two tbsp of butter. Once melted, add the chopped apples, honey, sugar, cinnamon, calvados, and vanilla bean. Stir to combine and cook for 10-15 minutes until soft but still has a slight crunch in the center.
While the apples are cooking, prepare the bread slices by cutting two circles to fit on the top and bottom of the mold. I used a 6" x 3" springform pan. I had to cut two 5 1/2" circles and 12 - 3" x 2" rectangles. Cut the bread slices according to the size and shape of your mold.
Once you have your bread slices ready. Generously brush both sides of your bread slices with the melted butter.
Arrange the bread in your mold or pan. Pour the cooked apples into the center and top with the second bread circle.
Bake for 30 minutes or until golden brown. Let it cool before taking it out of the mold.
