In a stand mixer fitted with paddle attachment, mix together the eggs and softened butter or shortening until combined. Add the sugar and salt and mix to combine.
Stream in the water. Switch to a dough hook attachment and add the bread flour and milk powder a few spoonfuls at a time. Mix on medium speed until you get a smooth dough, 4-5 minutes.
Let the dough rest for 15-20 minutes for it to relax. At this point, you can use any template you choose. My piece was 12x12 and the rough templates included fit perfectly. Use a bit of water to help adhere the pieces of dough together.
To finish your piece, brush with egg wash. To add color, I mixed some of the egg wash with the chili powder, curry powder, or cocoa powder.
Bake at 300F, for 1 hour. Check every 10 minutes for the first 30 minutes for any bubbles that may have developed. Pierce the bubbles with a thin metal skewer or toothpick. It should be thoroughly dried.
