Stranger Things: Mrs. Wheeler's Meatloaf and Mash Potatoes

Ingredients
  

  • | MASHED POTATOES |
  • 2 lbs - russet potatoes cleaned and peeled
  • 4 tbsp - unsalted butter
  • 1/2 - 1 cup - heavy cream
  • salt and pepper to taste
  • | MEATLOAF |
  • 1/2 lb - ground beef
  • 1/2 lb - ground pork
  • 1 - small onion finely diced
  • 2 - garlic cloves minced
  • 1 - egg
  • 2-3 dashes - worchestire sauce
  • 1 tsp - dried rosemary
  • 1 tsp - dried thyme
  • 1/2 cup - A1 steak sauce
  • 1/2 cup - ketchup
  • 1/2 tsp - salt
  • 1/2 tsp - ground black pepper
  • | GLAZE |
  • 1/2 cup - A1 steak sauce
  • 1/2 cup - ketchup
  • 2 tbsp - brown sugar

Instructions
 

  • Preheat the oven to 350F.
  • For the mashed potatoes, quarter the peeled potatoes and place it into a large pot of cold water. Place it over medium high heat and bring to a boil. Cook until you can easily pierce the potatoes with a knife. Meanwhile, heat the butter and cream together just until the butter melts. Drain the cooked potatoes and return it back to the pot. Mash the potatoes with a masher or a ricer. Add the warm cream and butter and stir until combined. Season with salt and pepper.
  • To prepare the meatloaf, combine all your ingredients in a bowl and mix it together with your hands. You can either shape and bake this freeform on a pan or in a loaf pan. Combine the ingredients for the glaze and generously lather half of the mixture onto the meatloaf.
  • Bake for 40 minutes and apply on the rest of the glaze. Bake for another 15 minutes and test to see if your meatloaf is cooked through. The internal temperature should be 160F.
