Downton Abbey: Afternoon Tea

A recipe for tea sandwiches inspired by the television series, Downton Abbey. These tea sandwiches are just one part of this afternoon tea spread.

Ingredients
  

  • 8 slices white bread
  • 2 tbsp unsalted butter room temperature
  • 1 English cucumber thinly sliced
  • 4 whole eggs
  • 3-4 tbsp mayonnaise
  • salt and pepper to taste
  • watercress or microgreens as needed

Instructions
 

Egg and Cress Sandwich

  • Place the eggs in a saucepan and add enough water just to cover. Place over high heat and bring to a complete boil. Turn the heat off and and cover the saucepan for 5 minutes. After the 5 minutes, place the eggs into an ice bath to cool down.
  • Peel the eggs and place it into a bowl. Add 3 tbsp mayonnaise and smash it with the eggs until you get a chunky mixture. You can add the last tbsp of mayonaisse if you prefer. Season with salt and pepper.
  • Spread the mixture between two slices of bread. Top with a few pieces of cress or micro greens. Place the second slice of bread on top. Trim of the crust of the sandwiches and then slice in half to make rectangles.

Cucumber Sandwich

  • Trim off the ends of the cucumber and slice into thin rounds. Spread the butter evenly on 4 slice of bread. Neatly arrange the slices of cucumbers on the bread. Top with second slice of bread on top. Trim off the crust and slice in half into rectangles.

Notes

- These sandwiches are best made on the day of. If you prepare them early, refrigerate until needed.
- English cucumbers tend to have smaller seeds so there is no need to remove the seeds. If you're using another type of cucumber, you might want to slice the cucumber in half and and remove the seeds.
