Downton Abbey: Victoria Sandwiches

A recipe for Victoria Sandwiches for afternoon tea inspired by the television show and movie, Downton Abbey.

Ingredients
  

  • 675 grams caster sugar
  • 6 whole eggs
  • 450 grams all purpose flour sifted
  • 2 tsp orange flour water
  • 1 tsp baking powder
  • 90 grams ground almond
  • strawberry jam as needed

Instructions
 

  • Preheat the oven to 350F. Butter a 9x13 square baking pan and dust with an even layer of sugar. Tap out any excess sugar and set aside.
  • In a bowl, whisk the eggs until frothy. Add the sugar and mix together and well combined. Add the sifted flour and gently mix it into the mixture. Add the ground almond, orange flour water, and baking powder. Mix it all thoroughly together.
  • Pour the batter into the prepared pan. Give the pan a few taps on the counter and wrap a wet cloth around the outside of the baking tin. Bake in the oven for 25 minutes or until golden brown.
  • Let it cool and cut the cake strips. The size will depend on how big you want your sandwiches to be. I sliced mine into 4 strips. Take one of the strips and slice it in half to make a sandwich. Spread a layer of jam in the middle and layer the top half on top. Slice into rectangles and serve.
