- 1/2 cup buttermilk 4oz / 113g
- 1 large whole egg
- 1/4 cup unsalted butter, melted 2oz / 57g
- 1/4 cup granulated sugar 1.75oz / 50g
- 1/2 tsp salt
- 1/2 cup cornmeal
- 1/2 cups all purpose flour 2.25oz / 64g
- 1/2 tsp baking soda
- 3/4 cup fresh blueberries 3oz / 40g
Preheat the oven to 400F. Lightly grease a 8" pan or a cast iron pan.
In a bowl, combine the sugar, salt, cornmeal, baking soda, and flour. Mix to combine. Take 2 tbsp of the dries and toss them into the blueberries to coat.
In another bowl, combine all the wet ingredients. Mix to combine.
Fold the wet ingredients into the dries. Once it's also incorporated, fold in the blueberries. Mix just until combined. Pour the batter into the prepared pan. Bake for 25 -30 minutes until golden brown.
