A Peter Rabbit menu wouldn’t be complete without a lot of vegetables, especially some peas.  What’s really great is that this soup doesn’t need to simmer on the stove all day.  It honestly takes around 10 minutes of cooking until the peas are tender and you’re done!  I love the addition of green garlic because although the flavor is so similar to garlic, it feel it’s much sweeter and mellow than mature garlic.

This soup is great made a day ahead but make sure to heat it gently when you’re reheating it.  You want to keep the vibrant green the fresh peas provide or else it will get a dull brown hue.  I’ll be completely honest and say, peas are not my favorite.  There is something about the texture of it that I’m not a fan of.  Fresh peas, however, have such better flavor so make sure you use fresh peas if you are able to get your hands on some.  Frozen are next best if you want it on a pinch.


An old mouse was running in and out over the stone doorstep, carrying peas and beans to her family in the wood. Peter asked her the way to the gate, but she had such a large pea in her mouth that she could not answer. She only shook her head at him. Peter began to cry.

The Tale of Peter Rabbit: Green Garlic and Pea Soup

The Tale of Peter Rabbit: Green Garlic and Pea Soup recipe inspired by the story of Peter Rabbit by Beatrix Potter. This is part of the Peter Rabbit feast for Easter.

Ingredients Method

Ingredients
  

  • 2 tbsp canola oil
  • 1 bunch green garlic Cleaned and diced small
  • 2 cups fresh green peas
  • 3 cups vegetable stock
  • pinch cayenne or to taste

Method
 

  1. Place a saucepan over medium heat with 2 tbsp of oil. Add the diced green garlic and cook for 4-5 minutes until soft. Season with salt and pepper.
  2. Add the green peas, cayenne, and vegetable stock. Bring the mixture to a boil and then down to a simmer. Simmer for another 8 minutes. Transfer the soup to a blender and blend until smooth. Taste for salt and pepper.
