It’s important when throwing a party, to make sure the food is east to prepare and these cucumber sandwiches are not only easy to put together but it’s also so striking to look at.  I love they way the green just pops on the table.  Typically, cucumber tea sandwiches are sandwiched between two slices of bread but I thought leaving it open will give me a bit more room for creativity.  Thankfully, the sandwiches are as delicious as they look.  I love the soft white bread on the bottom with a thin layer of herby cream cheese to pull everything together.

The cucumber sandwiches can easily be made in advance.  Make sure to wrap the sandwiches with plastic wrap to prevent the cucumbers from drying out.

I can’t believe it’s the last Sunday or March.  Next Sunday is Easter and ever since I’ve become an aunt, Easter and the holidays in general has been so much fun for me.  Like previous years, we’ll be doing an Easter egg hunt at home.  I’ll have my little secret stash of Cadbury eggs hidden from any hungry children. It’s incredibly sweet but I really can’t help myself but purchase a bag for myself each year.

The Tale of Peter Rabbit: Cucumber Sandwiches

The Tale of Peter Rabbit: Cucumber Sandwiches inspired by the movie and stories by Beatrix Potter. A perfect sandwich for Easter and tea time.

Ingredients
  

  • 3 slices white bread
  • 2 small Persian cucumbers
  • 6 tbsp cream cheese
  • 1/8 tsp garlic powder
  • 1 tsp chopped fresh dill

Instructions
 

  • Combine the cream cheese, garlic powder, and dill in a bowl. Mix to combine. Set aside
  • With a vegetable peeler, peel the cucumber from one end to another to create strips. Do this with both cucumbers and make sure to be careful of cutting your fingers. Each strip of cucumber should have a bit of green on each edge.
  • Spread the cream cheese mixture onto the white bread. Arrange the cucumber strips on the bread with each strip overlapping one another to create a pattern. Trim off the crust of the bread and slice the bread into 4 triangles.
