The Lord of the Rings: Eowyn’s Soup for Aragon

Eowyn: I made some stew, it isn’t mush but it’s hot.

Aragon: Thank you… it’s good…

THE LORD OF THE RINGS

I’m sure those who are familar with The Lord of the Rings movies cringed at the scene between Eowyn and Aragon when she handed him soup with what seemed to consist of a few bits of greens and pieces of fat.  There wasn’t much for her to work so you can’t blame the girl for trying!  For this recipe, I have a considerably better version of Eowyn’s soup.  I’m not usually a fan of fish soup but I really enjoyed it with the potatoes and leeks.  Enjoy!

Eowyn’s Stew

The Lord of the Rings: Eowyn’s Fish Soup

yield: 2      prep time: 30 minutes      total time: 1 hour

ingredients:

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/4 cup thinly sliced leeks, cleaned and whites only
  • 1 cup diced cooked potatoes
  • 1/4 cup dry white wine
  • 1 cup chicken stick
  • 3/4 cup water
  • 12 oz white fish like halibut, diced into bite size pieces
  • 1 cup fresh spinach, cleaned
  • salt and pepper to taste

directions:

  1. Heat a medium pot over medium heat.  Add the butter, olive oil, and sliced leeks.  Cook the leeks until soft.  Add your white wine and bring to a simmer for 3 minutes.  Add your potatoes, stock, and water.  Simmer for 10 minutes and add your pieces of fish.  Let this simmer for another 5-6 minutes until the fish is just cooked through.  Finally, add your spinach and cook just until it’s wilted, approximately 2 minutes.  Taste it one last time for seasoning and serve!
