Sense8: Icelandic Pancakes with Skyr recipe

Ever since Sense8 premiered in 2015, my sister has been obsessed with the show.  Like many others, we were devastated when we heard it was getting canceled.  Thankfully, they announced a few months ago that they will be returning back for a two hour special on Netflix!  To celebrate, I’ve decided to make a few recipes we see from the show.  I hope you enjoy it!


The seagulls might as well have been speaking Icelandic. The jar of skyr? We even know the fucking farm it came from: Three Sisters.

WHISPERS, SENSE8, SEASON TWO, EPISODE: WHO AM I?


The first recipe of the series are these Icelandic pancakes and skyr yogurt.  The pancakes were mentioned in season one and the skyr was mentioned in season two.  I have heard of skyr yogurt before but I’ve never had Icelandic pancakes.  After some research online, it’s quite similar to crepes and it’s typically served with whipped cream and jam.  Fresh berries would also be a wonderful accompaniment to these pancakes.  Please enjoy!

Sense8: Icelandic Pancakes with Skyr

A recipe for Icelandic pancakes served with jam and skyr yogurt inspired by the Netflix series, Sense8, starring Jamie Clayton, Miguel Ángel Silvestre Rambla, and Tuppence Middleton.

Ingredients
  

  • 1 cup all purpose flour
  • 2 tsp granulated sugar
  • 1/2 tso salt
  • 4 large whole eggs
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • unsalted butter as needed
  • strawberry jam as needed
  • 1 container skyr yogurt 5oz

Instructions
 

  • In a bowl, whisk together the eggs, vanilla, and milk. In another bowl, stir the flour, sugar, and salt together until well combined.
  • Add the wet ingredients to the dries and mix just until combined.
  • Heat a cast iron pan over medium high heat. Add a pad of butter and once it's melted, add enough batter to cover the pan in a thin even layer. Flip the pancake over when when the top starts to set and the edges take a lightly golden color. Flip and cook for another 30 seconds.
  • Serve with skyr and jam.
