I make my own blueberry cornbread.  Yeah, well, from a mix in a box, but I add blueberries in.

HELLO, MY NAME IS DORIS, 2016


This recipe for blueberry cornbread is inspired by the movie, Hello, My Name is Doris, starring Sally Field.  This movie debuted early 2016 and it follows Doris, a women in her 60’s, who has quite a crush on a younger coworker, John.  It’s a funny yet sensitive movie as we follow her complicated love life and mental issues.

As we’re getting into the holidays, it’s really great to have these recipes on hold for any dinner parties or gatherings.  Please enjoy.

Hello, My Name is Doris: Blueberry Cornbread

Hello, My Name is Doris: Blueberry Cornbread recipe inspired by the movie, Hello, My Name is Doris, starring Sally Field released in 2016.

Ingredients
  

  • 1/2 cup buttermilk 4oz / 113g
  • 1 large whole egg
  • 1/4 cup unsalted butter, melted 2oz / 57g
  • 1/4 cup granulated sugar 1.75oz / 50g
  • 1/2 tsp salt
  • 1/2 cup cornmeal
  • 1/2 cups all purpose flour 2.25oz / 64g
  • 1/2 tsp baking soda
  • 3/4 cup fresh blueberries 3oz / 40g

Instructions
 

  • Preheat the oven to 400F. Lightly grease a 8" pan or a cast iron pan.
  • In a bowl, combine the sugar, salt, cornmeal, baking soda, and flour. Mix to combine. Take 2 tbsp of the dries and toss them into the blueberries to coat.
  • In another bowl, combine all the wet ingredients. Mix to combine.
  • Fold the wet ingredients into the dries. Once it's also incorporated, fold in the blueberries. Mix just until combined. Pour the batter into the prepared pan. Bake for 25 -30 minutes until golden brown.
