RITA:  I have stewed apples for dessert.  Do you like stewed apples?

OFFRED: Thank you.

RITA:  You are welcome. I even found some cinnamon.  I swapped for it.  I gave her a lot of cheese.

THE HANDMAID’S TALE, SEASON ONE, EPISODE THREE


 Stewed apples has to be very first on the list of easiest desserts to put together.  Essentially, stewed apples are diced apples sweetened with sugar and spices.  After an hour simmering on the stove, the apples are ready to be enjoyed.  To me, stewed apples are just like apple pie filling.  It warm, comforting, and delicious – perfect alone or with vanilla ice cream.  I imagine stewed apples baked with a crumble on top would

This scene comes from episode three of the Hulu show, The Handmaid’s Tale, starring Elisabeth Moss and Ralph Fiennes.  Offred was at first taken back by the sudden kindness she was shown from Rita and Serena Joy.  She soon later found out that the kindness was actually because they assumed she was pregnant.  The scene was quite funny because it seemed so out of character for Rita and Serena Joy to be so kind but that was quickly over and done with.

Ingredients
  

  • 4 tart apples diced 1/2" pieces
  • 2 tbsp unsalted butter
  • 1/3 cup brown sugar
  • 2 tbsp water
  • 1 tsp cinnamon
  • 1/8 tsp freshly grated nutmeg
  • pinch salt

Instructions
 

  • Comine all the ingredients in a saucepan. Stir to combine and place over medium low heat. Let it simmer for 45 minutes to one hour. The apples should just start breaking down and the sugar and butter should have created a beautiful sweet glaze. Serve warm.

Notes

  • I enjoy the skin on the apples but peel them before cooking, if you prefer.
