Ingredients

4.5 oz / 127g / 1 cup - fresh sweet peas
4 - mint leaves
2 oz / 56g / 1/4 cup- simple syrup equal parts water and sugar brought to a boil
2 cups - water

Method

Bring a pot of water to a boil over high heat. Blanch the peas and mint for 30 seconds and immediately transfer to an ice bath.
Strain and transfer to a high powered blender with the water. Blend and add the simple syrup to taste.
Strain and churn in an ice cream machine. Follow the machine's instructions.
