The Oscars are right around the corner and one of the most talked about movies this year is La La Land starring Emma Stone, Ryan Gosling, and John Legend.  The story follows Mia and Sebastian who both have big dreams of making it big in their careers.  Both Stone and Gosling were stunning in the movie and I know it’s going to be one I’ll watch over and over again.

This recipe is for gluten-free bread in which we saw a glimpse of while Mia was working at the coffeeshop at the Warner Bros Studios.  The scene was quite funny with Mia feverishly trying to figure out if the pastries were in fact gluten-free as her boss rants on about the employee schedule.  While rummaging through my recipes for gluten-free bread, I remembered I had made gluten-free bread at one of the restaurants I first worked at.  I remember it being so close to the wheat bread that I was familiar with.  The recipe is from the amazing Bouchon Bakery Cookbook using the Cup4Cup flour that you can find on amazon or at your local Target or specialty store.

A recipe for gluten free brioche inspired by the 2017 Oscar nominated movie, La La Land, starring Emma Stone and Ryan Gosling.

Ingredients
  

  • 7 g instant yeast (2 tsp)
  • 20 g granulated sugar (1 tbsp + 2 tsp)
  • 230 g warm water (3/4 cup + 2 tbsp + 1 1/4 tsp)
  • 535 g cup4cup, gluten free flour (3 3/4 cup + 1 tbsp)
  • 20 g salt (2 tbsp + 3/4 tsp)
  • 150 g whole eggs (1/2 cup + 2 tbsp)
  • 22 g egg yolks (1 1/2 tbsp)
  • 80 g honey (1/4 cup)
  • 100 g unsalted butter, melted and cooled ( 3.5oz)

Egg Wash

  • 1 whole egg
  • 1 egg yolk
  • maldon as needed

Instructions
 

  • In a bowl, combine the yeast, sugar, and warm water. Let it sit for 10 minutes.
  • In a mixing bowl fitted with a paddle attachment, combine the Cup4Cup and salt. Mix to combine. In a separate bowl, combine the eggs, honey, butter, and yeast mixture. Add it to the flour on low speed. Mix for 5 minutes on low speed then medium speed for another 5 minutes.
  • Scrape down the sides of the bowl and cover. Set aside for 1 hour. After an hour, place it into the refrigerator for 2 hours.
  • Prepare a 12 cup muffin tin by lightly greasing it. Scoop the dough evenly into the muffin tin. Set aside in a warm area for 45 minutes. It should just slightly double in size.
  • Preheat the oven to 350F. Prepare the egg wash by whisking together the egg and yolk. Brush with the egg wash and sprinkle maldon salt on top. Bake for 15 minutes or until golden brown. Transfer to a cooling rack and cool completely.
