PIXAR’S INSIDE OUT


Bing Bong from Pixar’s Inside Out stole my heart when I watched the movie and I wanted to create something inspired by him.  Without giving too much away from the story for those who have not seen it yet, Bing Bong cries candy instead of actual tears. So here it is, Bing Bong’s Candy Caramel Tears from Inside Out.  Enjoy!

Pixar’s Inside Out: Bing Bong’s Caramel Candy Tears

yield: 1 – 9″x9″ pan      prep time: 20 minutes      total time: overnight

ingredients:

  • 8 oz heavy cream
  • 8 oz granulated sugar
  • 4 oz corn syrup
  • 1 vanilla bean, split and scraped
  • 1.5 oz unsalted butter, room temperature
  • 1 tsp salt

directions:

  1. In a large pot, add your heavy cream, sugar, corn syrup, and vanilla.  Place it over medium high heat.  Stir the mixture once to ensure the sugar is not suck to the bottom or it might burn.  Cook the sugar mixture to 250F.  Keep an eye on the pot in case it over flows.  Grease the pan you are going to use to prevent sticking.
  2. Once it reaches 250F, add the butter and salt.  Cook it back up to 250F and turn of the heat.  Pour the mixture into the pan and let it cool and firm.  This might take a few hours.  Once firm, release the caramel from the pan.  It’s okay if the caramel starts to pull or take on odd shapes because it’s very easy to shape it back.  Lightly grease the blade of your knife and start to cut the caramel into desired shapes.  I cut mine into 1 1/2″ logs.  It is easier to cut the caramel in a sawing motion.  Wrap your caramels in acetate or any kind candy wrappers you like.
