EMPLOYEE:  You’re very welcome.  You came on mac and cheese night.  Lucky.  Thursday is turkey tetrazzini.

Who can say no to pasta tossed in a creamy sauce that is then baked in oven with a crunchy and cheesy topping?  I obviously couldn’t!  The mention of this dish was short and quick but monumental for Moira who has finally escaped from the night club she was working in.  It was such a happy yet heartbreaking scene.

This dish was supposedly created in San Francisco’s Palace Hotel after Luiza Tetrazzini, the famous singer.  It’s not known if she actually tried the dish but I can’t imagine anyone hating this comforting dish.  This dish is a great way to use up leftover meat and vegetables.  Please enjoy!

The Handmaid's Tale recipe for turkey tetrazzini inspired by the Hulu show, The Handmaid's Tale, starring Elisabeth Moss.

Ingredients
  

  • 2 cups cooked shredded turkey meat
  • 1/2 pound linguini pasta
  • 3 slices thick cut bacon medium dice
  • 1/2 red onion small dice
  • 2 cloves garlic, minced
  • 1 pound button mushrooms cleaned and sliced
  • 1/2 cup white wine
  • 2 tbsp unsalted butter
  • 3 tbsp all purpose flour
  • 1 cup milk
  • 1 cup chicken stock
  • 3/4 cup breadcrumbs
  • 1 cup shredded mozzarella

Instructions
 

  • Place the diced bacon on a cast iron pan over medium heat. Cook just until lightly golden. Scoop out the bacon and set aside. In the same pan, add the diced onions and garlic and cook for 3 minutes. Turn the heat onto high and add the sliced mushrooms. Cook until the mushrooms are lightly golden.
  • Meanwhile, bring a pot of water to a boil with a generous pinch of salt. Cook the linguini until al dente.
  • Preheat the oven to 375F. Have a lightly buttered baking dish ready.
  • Once the mushrooms are lightly golden brown, add the white wine and cook until most of the liquid has evaporated. Turn down the heat to medium and add the unsalted butter and cook just until melted. Stir in the flour and mix to combine.
  • While whisking, stream in the stock. Whisk to prevent any lumps. Add the milk and stir to combine. Bring the mixture to a simmer and cook until it thickens. Season to taste with salt and pepper.
  • Stir in the bacon, cooked turkey, and cooked pasta. Stir the breadcrumb and cheese together in a bowl. Season with salt and pepper. Pour the pasta mixture into the baking dish. Top generously with the breadcrumb and cheese mixture. Bake for 10 minutes or until the top is golden brown.
