As I pull myself out of bed, unwilling to face the fact the we do not get a new episode of The Walking Dead this Sunday, I realize that there is in fact light at the end of the tunnel.  Season five of HBO’s Game of Thrones premieres this Sunday and I am ecstatic!
To celebrate the premiere and to soothe my cold, I decided to make Bowl of Brown.  Bowl of brown is a stew made in the slums of Kings Landing.  It’s a stew for the poor usually consists of unrecognizable pieces of meat, barley, carrots, and any other ingredients that they have on hand.  While I’m not adding rats, dogs, or foreign pieces of meat to this stew, it’s a great way to use up some ingredients in your pantry and still be authentic. Ingredients
  

  • 2 tbsp - canola oil
  • 3 large - red onions thinly sliced
  • 2 - cloves of garlic minced
  • 2 - large carrots peeled and 1/4" diced
  • 1 cup - sliced portebello mushrooms
  • 1 cup - red wine
  • 3 cups - mushroom stock
  • 1 cup - cooked barley
  • salt and pepper to taste
  • optional: beef cut into 1" cubes

Instructions
 

  • Heat a pot on medium heat with the canola oil until it starts to ripple.
  • If you decide to add meat to your bowl of brown, sear the meat now.  You only want a good sear on the outside of the meat.  It will finish cooking later. Once your meat is done searing, take it out of the pot and set it aside.
  • Add your garlic and onions and sweat on medium heat.  Once the onions start to cook down, add your mushrooms and carrots.
  • Cook the mushrooms and carrots for around 5 minutes and then add your cup of red wine.  Make sure it is something you will drink!
  • Scrape off some of the fond off the bottom of the pot. Add all your stock.
  • Add your cooked barley and seared meat, if you decided to add it, and let it simmer for 30 minutes.
  • Check to see if you carrots have cooked through and season with salt and pepper. Serve with some crusty bread and enjoy!
