The premiere of Game of Thrones is so close I can barely handle the excitement and anxiety I’m feeling right now. This past week I’ve been catching up on all the promo HBO has been doing for the premiere of the show. It’s a feast for the eyes but so painful for the wallet. Anyone else completely sucked in to all the amazing GoT products they’re selling??

Moving along with the Game of Thrones food series, here’s a recipe for cheese and onion pie. It’s essentially a quiche but with a bit more onions and currants than normal but just as delicious! The recipe comes from A Gode Cookery which is a website I’ve used a few times before. They have such an amazing collection of recipes and I highly suggest you to take a visit if you’re interested in vintage recipes.

If you’re throwing a, Game of Thrones, viewing party, this recipe is a great item to add to the menu. It’s easy to whip together and it can be made a day ahead of time. I hope you enjoy it!

Game of Thrones: Cheese and Onion Pie

Game of Thrones: Cheese and Onion Pie recipe inspired by the HBO series, Game of Thrones, and George R.R. Martin's series, A Song of Ice and Fire.

Ingredients
  

Crust

  • 1 1/2 cup all purpose flour
  • 1 stick unsalted butter, cold thinly sliced
  • 1/2 tsp salt
  • 1/4 cup ice cold water

Filling

  • 2 medium onions small dice
  • 1/4 cup chopped parsley
  • 1 cup shredded cheddar cheese 90g
  • 7 large whole eggs
  • 1 tbsp melted butter
  • 1/2 tsp salt
  • 1/4 cup currants
  • 1/4 tsp sugar
  • pinch freshly grated nutmeg

Instructions
 

Crust

  • In a bowl of a stand mixer fitted with a paddle attachment, mix together the flour and salt until combined. Add the butter and mix on medium speed until you get hazelnut size pieces of butter in the flour. Add just enough water until the dough comes together when pressed. Wrap and refrigerate for 40 minutes until firm.
  • Preheat the oven to 375F. On a lightly floured surface, roll the dough out into a circle, approximately 12 inches in diameter. Lay a sheet of parchment on top and top with baking beans. Blind bake for 15 minutes and remove the beans and parchment. Bake again for 15-20 minutes until lightly golden brown. Set aside to cool.

Filling

  • Bring a saucepan of water(about 4 inches) to a simmer, add the onions and let it simmer for 3-4 minutes until just soft but it still retains its shape. Drain well.
  • In a bowl, whisk together the eggs until thoroughly combined. Add the rest of the ingredients and mix to combine.
  • Pour the filling to the pie crust and bake for 35 minutes until just set and the top is golden brown. Let cool before slicing and serving.
