MRS. HUGHES: Is there some difficulty, Your Ladyship?

CORA: Dear Mrs Hughes, as you know we’re giving a dinner on Friday for Sir Anthony Strallan?

MRS. HUGHES: Yes, milady.

CORA: It seems he is particularly fond of a new pudding. It’s called Apple Charlotte. Do you know it?

MRS. HUGHES: I’m not sure.

CORA: His sister, Mrs Chetwood, sent me the receipt. I’m trying to persuade Mrs Patmore to make it.

MRS. PATMORE: And I’m trying to persuade Her Ladyship that I have planned the dinner with her and I can’t change it now.

MRS. HUGHES: Why not?

MRS. PATMORE: Because everything’s been ordered and prepared.

MRS. HUGHES: Well, there’s nothing here that looks very complicated. Apples, lemons, butter

MRS. PATMORE: I cannot work from a new receipt at a moment’s notice!

DAISY: But I can read it to you, if that’s the problem.

MRS. PATMORE: Problem? Who mentioned a problem? How dare you say such a thing in front of Her Ladyship!

CORA: Very well.

A recipe for Apple Charlotte inspired by Mrs. Patmore in Season 1 of Downton Abbey.

Ingredients
  

  • 16 oz / 454g / 5 cups - chopped apples peeled, medium dice(granny smith or mixed)
  • 2 tbsp - honey
  • 3.5 oz / 100g / 1/2 cup - granulated sugar
  • 1/2 tsp - cinnamon
  • 2 tbsp and 1/2 cup melted - unsalted butter
  • 1/2 - vanilla bean scraped
  • 2 tbsp - calvados
  • 12 - thin slices white bread crusts removed

Instructions
 

  • Preheat the oven to 400F.
  • Heat a dutch oven over medium heat and add the two tbsp of butter. Once melted, add the chopped apples, honey, sugar, cinnamon, calvados, and vanilla bean. Stir to combine and cook for 10-15 minutes until soft but still has a slight crunch in the center.
  • While the apples are cooking, prepare the bread slices by cutting two circles to fit on the top and bottom of the mold. I used a 6" x 3" springform pan. I had to cut two 5 1/2" circles and 12 - 3" x 2" rectangles. Cut the bread slices according to the size and shape of your mold.
  • Once you have your bread slices ready. Generously brush both sides of your bread slices with the melted butter.
  • Arrange the bread in your mold or pan. Pour the cooked apples into the center and top with the second bread circle.
  • Bake for 30 minutes or until golden brown. Let it cool before taking it out of the mold.
