We walk fast toward the Pit. The muffin is banana-flavored, with walnuts. My mother baked bread like this once to give to the factionless, but I never got to try it.

I celebrated Easter yesterday at home with my two nephews. We really didn’t want to face the crazy crowds that usually gather on Easter. Instead, we stayed home and had our own Easter egg hunt with plenty of candy filled eggs and brunch. I made a sausage and mushroom frittata, parmesan and garlic popovers, and roasted cipollini onions. It was just a perfect way to end the week. Do you guys celebrate Easter and if so, how do you celebrate?

I was looking through my list of ideas for my next recipes and I thought it would be perfect to tackle on some of the recipes from the Divergent series. I’ll be perfectly honest and say, I’m not a big fan of the series. I am, however, a big fan of Shailene Woodley. One of the most popular recipes from this series is the Dauntless chocolate cake. I’ll be posting that recipe soon but today I have a recipe for banana muffins with walnuts. This can be easily baked in a loaf pan if you prefer.

Ingredients
  

  • 100 g / 3.5oz - unsalted butter room temperature
  • 100 g / 3.5oz - granulated sugar
  • 1/2 tsp - salt
  • 2 - eggs large
  • 220 g / 8oz - all purpose flour
  • 40 g / 1.5oz - almond flour
  • 2 tsp - baking powder
  • 2 tsp - baking soda
  • 1 cup / 226g / 8oz - greek yogurt
  • 1 tsp - vanilla extract
  • 2 - ripe bananas mashed with a fork
  • 1/2 cup - chopped walnuts
  • turbinado sugar as needed

Instructions
 

  • Preheat the oven to 350F. Prepare a muffin tin with muffin liners.
  • In a stand mixer with paddle attachment, cream together the sugar and butter until smooth.
  • Add the egg one at a time while scraping the bowl in between. Add the vanilla extract.
  • Add the yogurt and mix to combine. Combine the dries and add it to the mixer in two to three additions.
  • Fold in the bananas and walnuts.
  • Scoop the batter into the prepared muffin tin. Sprinkle turbinado sugar on top and bake for 20-25 minutes. It should be golden brown and firm to the touch.
