There are so many recipes I want to recreate from the movie, Chocolat, for Valentine’s Day but I decided to tackle the easiest recipe first, chocolate cake. You can’t celebrate Valentine’s Day without chocolate and while we’re at it, why not make it as rich and decadent as possible? Also, this recipe is flourless. That makes this healthy…right?

If you haven’t seen Chocolat yet and you’re a chocolate lover, you’re definitely missing out on something amazing. Chocolat is a 2000 Oscar nominated film featuring Juliette Binoche, Judi Dench, and Johnny Depp. It takes place in 1959 in a French village of Lansquenet-sous-Tannes where a mother and daughter set up a chocolate shop as everyone starts their 40 days of Lent. It’s really a great film so definitely check it out if you haven’t already!

A recipe for flourless chocolate almond torte from the 2000 film, Chocolat.

Ingredients
  

  • 5 - eggs large, seperated
  • 142 g / 5oz / 3/4 cup - granulated sugar
  • 230 g / 8oz / 1 cup - unsalted butter
  • 175 g / 6oz / 1 1/4 cup - dark chocolate roughly chopped
  • 160 g / 5.5oz / 1 1/2 cup - almond flour
  • 1/2 tsp - salt
  • 1 tsp - vanilla extract

Instructions
 

  • Preheat the oven to 350F
  • Prepare an 8" round springform pan by spraying it with nonstick spray and cutting a round piece of parchment to fit on the bottom the pan. Set aside.
  • Combine the butter and chocolate in a small pot and place on medium low heat. Heat just until melted and set aside to cool.
  • In a stand mixer, whisk the egg yolks, vanilla extract, and sugar together until pale in color. Slowly stream in the melted butter and chocolate. Add the almond flour and salt and mix until thoroughly combined.
  • In another clean mixer, whisk the egg whites on medium speed until it forms stiff peaks. Mix half the egg whites into the batter. The mixture should now be lighter. Gently fold in the rest of the egg whites with a spatula.
  • Pour the batter into the prepared cake round and bake for 40-45 minutes until a skewer comes out clean.
