The great Leonardo da Vinci, who I’m certain was a warlock, although it’s never been proven, in his masterpiece The Last Supper, depicted grilled eels, bread and wine on the table.I’ve chosen caviar from the Caspian Sea. Served on blinis.

Ingredients:

sponge

  • 4 oz milk, 110F
  • 1 tsp active dry yeast
  • 1 tsp sugar
  • 1/2 cup / 3 oz all purpose flour

batter

  • 3 oz butter, melted and cooled
  • 1 large egg, seperated
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 2 oz ale
  • 3 oz all purpose flour, sifted
  • 3 oz clarified butter
  • 2 oz canola oil
  • 2 tbsp heavy cream, chilled

garnishes

  • caviar
  • creme fraiche
  • chives, finely chopped
  • smoked salmon

Directions:

  1. Combine all ingredients for the sponge in a bowl and mix together.  Cover with plastic wrap and set aside for 1 hour.
  2. Mix together the melted butter, yolk, sugar, salt, and ale. Whisk to combine. Fold in the sponge and the last amount of flour.
  3. Wrap with plastic and set aside at room temperature for 2-3 hours.  Whisk the egg white until soft peaks form.  Fold the whites into the batter.  In the same bowl, whisk the cold heavy cream to soft peaks. Gently fold it into the batter.
  4. Pour the batter into a squeeze bottle.  Heat a large pan over medium high heat with a thin layer of the clarified butter and oil combination.  Once the pan is very hot, turn the heat down to medium and quickly pipe out 1 1/2″ rounds with the batter.
  5. Cook until golden on both sides.  Drain on paper towels and serve with a dollop of creme fraiche, smoked salmon, chives, and caviar.
