NICK: That’s very sweet of you and very unnecessary.

SHAWNA: You have to keep up your strength. Say: Chicken frito pie!

‘Oh, you poor man. Well, cold cuts, that won’t do it.’ She shook her head, the gold hoops flickering sunlight. ‘You need to keep up your strength. Now, you are lucky, because I make a mean chicken Frito pie. You know what? I am going to put that together and drop it by the volunteer center tomorrow. You can just microwave it whenever you want a nice warm dinner.’

“Gone Girl” is a thrilling movie starring Ben Affleck as Nick Dunne and Rosamund Pike as his wife, Amy. The movie was released in October 2014 based off of Gillian Flynn’s 2012 novel.  This Frito pie scene caught my attention in the movie because he was hilariously so awkward Shawna and who doesn’t like Frito pie? I’ve had Frito pie before but it’s usually served with a beef chili instead of chicken.  It would also be really fun if you served the Frito pie in small Frito Lays bags if you were making this for a party.

Ingredients
  

  • 1 pound - chicken breast
  • 1/2 tsp - garlic powder
  • 1 tbsp - chili powder
  • 1/2 tsp - paprika
  • salt and pepper
  • 2 tbsp + 1 tbsp- vegetable oil
  • 3 - garlic cloves minced
  • 1/2 - yellow onion medium, small dice
  • 1 - red bell pepper medium, small dice
  • 8 oz - canned black beans
  • 20 oz - canned diced tomatoes
  • 18 oz - Frito Lays corn chips
  • TOPPINGS:
  • shredded cheddar cheese
  • scallions
  • diced tomatoes

Instructions
 

  • Heat a cast iron girl on high heat. Meanwhile, marinate the chicken breast in the garlic powder, chili powder, paprika, 1 tbsp of oil, and salt and pepper. Rub the chicken to evenly distribute the spices. Brush the grill with oil and once hot, cook the chicken on both sides until cooked through. Set aside when cooked.
  • Heat 2 tbsp oil in a medium saucepan over medium heat. Add the diced onions and garlic and cook for 3 minutes. Add the diced bell peppers and cook for another 5 minutes.
  • Add the canned diced tomatoes and black beans. Bring it to a boil then down to a simmer. Let it simmer for 30 minutes. Season for salt and pepper.
  • Dice the cooked chicken in bite size pieces. Mix half of the chicken with the chili mix and leave the other half to top the Frito pie with.
  • You can serve the Frito pie in individual packs of Frito corn chips or in a baking dish. Top with shredded cheese, tomatoes, and sliced scallions.
