Ingredients
  

  • 1 - acorn squash halved and seeds removed, around 2 lbs
  • 2 tbsp - olive oil
  • 1 tsp - ground cumin
  • 1 tbsp - chili powder
  • 2 tsp - paprika
  • 1 tsp - cayenne or to taste
  • 1 - garlic clove minced
  • 1 tsp - salt
  • optional: 1 tbsp - chia seeds

Instructions
 

  • Preheat the oven to 400F.
  • Slice the acorn squash into wedges (approximately 12 wedges) and place it into a bowl.
  • Toss the squash with all the seasoning with your hands. Spread the squash onto a roasting rack or sheet pan.
  • Bake the squash until tender and golden, about 15 minutes.
