Lane: You were supposed to tell me to get on a plane.
Don: Is that what you want? Or is that what people expect of you?

Lane: I want my beef.
Don: Here it is.

MAD MEN, SEASON 4


In season four of Mad Men, Don and Lane celebrated New Years together watching a movie and having dinner together. This episode was particularly emotional because Don just returned from his trip to California after realizing Anna has cancer. Lane, who has always had his own list of issues, misses his flight to London to be with his family and reveals that he has been having marital issues with his wife. After a few drinks and a movie, they head to a steakhouse for steak and baked potatoes. When the steaks arrive, Lane stands up in the middle of the restaurant and holds the steak against his groin and yells, “I got a big Texas belt buckle…YEE-HAW!”.

I have a very classic recipe today for steak. You can really choose whatever cut you prefer but I went with the t-bone to stay true to the scene. Make sure to pick a a good piece steak with marbling so the fat will add to the tenderness and the flavor of the steak. Seasoning is also crucial because the salt will help create that crust when your sear the meat. The butter is added at the end to prevent burning and it will add another layer off amazingness to your steak.

A recipe for classic steak and potatoes inspired by Mad Men's New Years episode in season 4.

Ingredients
  

  • 1 pound - T-bone Steak
  • 2 tbsp - canola oil
  • 2 tbsp - unsalted butter
  • 1 - medium russet potato
  • sour cream to top
  • grated cheddar to top
  • 1/2 cup - green peas
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 375F
  • Clean and scrub the potato well before cooking. Pierce the potato with a fork and toss the potato in olive oil, salt, and pepper and bake on a sheet pan for 1 hour or until the potato is soft and cooked through in the center. The skin should be nice and crispy.
  • minutes before cooking the steak, take it out of the refrigerator and let it temper at room temperature.
  • Heat a cast iron pan over high heat with canola oil. Season the steak liberally with coarse sea salt and pepper on both sides. When the pan is hot the and just about to smoke, carefully lay the steak on the pan.
  • Turn the steak every 45 seconds or so to get a more even cooking.
  • In the last few minutes of cooking your steak, add the butter. Baste the steaks with the melted butter with a spoon.
  • For medium rare, remove the steak from the heat at the internal temperature of the 130F. While it rests, the temperature should rise to 140F-145F.
  • Quickly cook the green peas in the same pan as steak, Season with salt and pepper.
  • To finish the baked potato, slice the potato in half, lengthwise, half way through the potato. Fluff it up with a fork and top with sour cream and cheese.
