Ingredients
  

  • 1 - 5 lb or smaller if you prefer - Hen
  • 1/2 - red onion minced
  • 1 - scallion finely chopped
  • 1 " - knob of ginger peeled and grated
  • 2 - garlic cloves minced
  • 1 tsp - dried thyme
  • 1 tsp - all spice
  • 1 tbsp - brown sugar
  • 1 tbsp - salt
  • 1/2 tbsp - ground black pepper
  • 1 tsp - cinnamon
  • 1 tsp paprika
  • juice of half a lemon
  • 1 tbsp - apple cider vinegar
  • vegetable oil

Instructions
 

  • Remove the giblets from the hen and pat dry. You can save the giblets for gravy or discard but remove the giblets before baking.
  • Combine all your ingredients together except for the hen.  Add just enough oil to the spices to create a paste. Rub the hen with the rub mix.  Make sure to get some under the skin as well. Let the hen marinate overnight or for at least an hour before roasting.
  • Preheat your oven to 400F.  Truss the chicken to ensure it keeps it's shape as it cooks.  Cook the hen until cooked through (approximately 45 minutes) or until the internal temperature reaches 150F. Let the hen rest for 10 minutes before cutting into it.
