A thick carrot soup, green salad, lamb chops and mashed potatoes, cheese and fruit, a chocolate cake.

The Hunger Games

For the first part of the tribute train car dinner, we have thick carrot soup.  The consistency of this soup is quite thick and I wanted to keep with the description in the book.  You can easily bump up the amount of stock in the recipe to adjust to the consistency you desire.

Ingredients
  

  • 2 tbsp - olive oil
  • 120 g or 1 - medium leek white and light green parts only, thinly sliced
  • 2 - cloves garlic minced
  • 1 pound - carrots peeled, large diced
  • 1 - granny smith apple peeled, cored and large diced
  • 1 tsp - cumin
  • 2 1/2 cups - chicken stock
  • 1/4 cup - heavy cream
  • salt and pepper to taste
  • bacon to garnish
  • sour cream to garnish

Instructions
 

  • Heat the oil over medium heat in a heavy bottom pot.  Add the leeks and garlic and cook for 3 minutes while making sure the garlic does not get too dark.  Add the diced carrots, apples, and cumin.  Cook for 10 minutes.
  • Add the chicken stock and bring it to a boil.  Reduce it to a simmer and cook until the carrots are soft.  Remove the pot from heat and transfer the mixture to a blender.  Blend the soup in batches if your blender is too small or is more than half full. Place a towel over the lid of the blender and medium until the soup is smooth.
  • Return the soup back to the pot, season with salt and pepper and add the cream to finish.  It's optional to garnish the soup with a dollop of sour cream and crispy bacon.
